DJ’s Infamous Coconut Banana Pancakes

Pancakes. Just saying the word makes me feel warm and comfy, how about you? There is no shortage of pancake recipes out there, so I ask you, have you tried The Rock’s Infamous Coconut Banana Pancakes? This pancake recipe was created by The Rock’s Chef Puttie as a cheat meal. Dry Ingredients

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 3 tablespoons cane sugar
  • ½ teaspoon sea salt
  • 10 tablespoons unsweetened shredded coconut

Wet Ingredients

  • 2 eggs
  • 1 cup coconut water
  • 1 cup coconut milk
  • ¾ cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons unsalted butter, melted (+ more to butter griddle)
  • 2 medium-sized bananas, small dice
  • Extra virgin olive oil spray for the griddle

Process

Sift flour and baking soda into a large bowl. Add sugar, salt, shredded coconut. Mix lightly with a wooden spoon.

In a separate bowl, lightly whisk eggs, coconut water, coconut milk, whole milk, vanilla extract, coconut oil, and butter.

Make a well in the center of the flour mixture and pour in the milk mixture. Mix lightly to combine, leaving batter clumpy.

Add bananas to batter, briefly stir to distribute evenly. Do not overmix – a few clumps are okay.

Heat a lightly oiled griddle to 275°F or frying pan over medium, using a combination of spray and butter.

Ladle or pour batter onto griddle, 1 cup for large cakes or ¼ cup for small cakes.

Cook until top of pancakes have bubbles and a few burst, about 2 to 3 minutes. Flip carefully with a thin spatula – the pancakes are thin.

Cook until browned and edges are crisp, about 2 to 3 minutes, adding more spray/butter if needed.
