Celebrate spring’s offerings with this Maple-Pomegranate Balsamic Vinaigrette and Marinade recipe.
As a vinaigrette it’s delightfully delicious on any salad, especially with chicken or shrimp. Drizzle over avocado toast with a fried or poached egg.
It’s also good as a marinade for chicken breast or pork tenderloin! Make sure to use parchment paper under your protein when baking because the marinade will caramelize. Serve with spring vegetables like asparagus, fiddleheads, or peas. Off the hook good!
Ingredients
- ½ cup pomegranate balsamic vinegar (or use your favorite balsamic vinegar)
- ¼ cup pure maple syrup
- 2 teaspoons Dijon mustard
- 1 cup good quality olive oil (my favorite is Greek olive oil)
- Salt & pepper to taste
Process
Whisk vigorously until smooth and emulsified. That’s it!
